Just Veggie Meal Ideas - Monday
Breakfast
- 1/2 cup orange juice
- 1/2 cup oatmeal
- 1 slice Country Harvest Flax bread, toasted
- 1 tbsp tahini butter
- 1/2 cup enriched soy beverage
- Water, tea or herbal tea*
Morning Snack
- 1/2 cup fresh grapes
Lunch
- 1/2 cup vegetable juice
- Grilled Vegetable Pizza Bagel: 1 Country Harvest Twelve Grain bagel topped with: grilled eggplant, red pepper, zucchini and mushroom, served au gratin with cheese (<20% M.F.) if desired
- Lentil Salad: 1/2 cup cooked lentils, onions, olive oil, lemon juice, tamari sauce, garlic and thyme to taste
- 1 cup watermelon
Afternoon Snack
- Strawberry Frozen Yogurt: blend together 3 oz soft tofu, 1/2 cup enriched soy beverage, 1/2 cup frozen strawberries and 2 tsp sugar.
Dinner
- Vegetarian Shepherd's Pie: Combine 3 oz vegetable protein (soy and wheat), with chopped onions, garlic and celery to taste, sauté, season to taste, mix with 1/2 cup cream corn, top with mashed potatoes and cook in oven at 350°F until potatoes turn golden brown.
- 1 cup fresh garden salad with 1 tbsp homemade dressing
- 2 fig cookies
- Water, tea or herbal tea.
