Breakfast

Morning Snack

  • 2 tbsp of dried apricots and cranberries

Lunch

  • 1 cup of minestrone soup
  • 1 cup of chicken salad (3 oz of chicken, with 1/4 cup of celery, peppers, onions, orange zest, and 1 tbsp of calorie-reduced mayonnaise)
  • 1/2 cup of seasonal fruit

Afternoon Snack

Dinner

  • Beef and vegetable sauté prepared with (3 oz of beef, 1/2 cup of vegetables served on 1 cup of vermicelli noodles)
  • 1 cup of Greek salad (tomatoes, onions, black olives, and feta) with 1 tbsp of light vinaigrette
  • 1 baked apple with cinnamon
  • 1 cup of water, coffee or tea
