Just Veggie Meal Ideas - Saturday
Breakfast
- 1/2 cup grapefruit juice
- 2 slices Country Harvest Stone Milled 100% Whole Wheat bread
- 1/2 cup enriched soy beverage
- 2 tbsp almond butter
- Water, tea or herbal tea
Morning Snack
- 1 cup watermelon
- 2 tbsp cashew nuts
Lunch
- 1/2 cup vegetable juice
- 1 cup pasta salad with cherry tomatoes, fresh basil and parmesan cheese sprinkled with 1 tbsp olive oil and garlic to taste
- 1/2 cup fresh pineapple
Afternoon Snack
- 1 slice Country Harvest Oat Bran bread with 1 tsp light jam
- 1/2 cup enriched soy beverage
Dinner
- Tofu au Gratin: mix 4 oz tofu with 1 cup your choice of vegetables (onion, green pepper, celery, carrot, zucchini and cauliflower). Sauté. Season with Tamari sauce. Top with cheese (<20% M.F.) and cook in oven until cheese turns golden.
- 1 sliced potato, sprinkled with olive oil and chives, then roasted in oven
- 1 cup garden fresh salad with 1 tbsp homemade dressing made with oil and balsamic vinegar
- 1/2 cup berries
- Water, tea or herbal tea
