Just Veggie Meal Ideas - Friday

Breakfast

  • 2 low-fat multigrain waffles topped with berries
  • 2 tsp maple syrup
  • 1 cup enriched soy beverage
  • Water, tea or herbal tea

Morning Snack

  • 2 tbsp nut and dried fruit mix

Lunch

  • 1/2 cup vegetable juice
  • Multicolored Bean Salad: combine 3/4 cup mixed legumes, 1/2 cup couscous and 1/2 cup fresh vegetables with 1 tbsp dressing (olive oil, vinegar and lemon juice).
  • Totally Veggie Sandwich made with Country Harvest Whole Wheat bread
  • 1/4 cantaloupe

Afternoon Snack

  • 1 small low-fat date muffin

Dinner

  • Vegetarian Chili: mix 1/4 cup red kidney beans, 3 oz diced tofu, 1/2 cup green and red bell peppers, chopped onions and mushrooms with 1/4 cup stewed tomatoes. Simmer and season with chili powder to taste.
  • 1 cup fresh garden salad with 1 tbsp homemade dressing
  • 1 slice Country Harvest Sunflower Flax bread
  • 1/2 cup soy pudding
  • Water, tea or herbal tea
