Light and Simple Meal Ideas - Sunday
Breakfast
- 1/2 cup fresh grapes
- Surprise French toast - 1 cup milk (<2% M.F.), 2 eggs, 1/2 ripe banana, 2 tsp honey, 2 tsp orange juice concentrate, vanilla extract to taste and Country Harvest Seven Grain bread
- 1 tbsp maple syrup
- Water, coffee or tea
Morning Snack
- 1 kiwi
- 1 small low-fat oatmeal muffin
Lunch
- 1/2 cup vegetable juice
- Chickpea and fruit salad - 3/4 cup chickpeas, 1/2 cup grapes, diced 1/2 apple, chopped 1/2 celery stalk, 1 tsp lemon juice and dressing (1 tbsp olive oil and 2 tsp cider vinegar) .
- 1 slice Country Harvest Whole Wheat bread
- 3/4 cup your choice of yogourt (<2% M.F.)
Afternoon Snack
- Fruit smoothie - blend 3/4 cup milk, 1/2 cup frozen fruit and 1/4 cup orange juice.
Dinner
- Spinach and bocconcini salad - 2 tsp butter or margarine, 1/2 chopped garlic clove, 1 tsp chopped fresh basil, 1 slice Country Harvest Oat & Honey bread, 2 cups spinach, 2 sliced Italian tomatoes, 1/4 cup minced red onions, 2 slices bocconcini cheese, 1 oz chopped hazelnuts and dressing (2 tsp balsamic vinegar and 1 tbsp walnut or olive oil)
- 1/2 cup watermelon
- Water, tea or herbal tea*
