Light and Simple Meal Ideas - Saturday
Breakfast
- 1/2 cup grapefruit juice
- 2 slices toasted Country Harvest Stone Milled 100% Whole Wheat bread with 2 tsp butter or margarine
- Ham and cheese omelet - 2 eggs, 2 tbsp water, 1 pinch Provence fine herbs, 1 pinch chives and parsley, 2 oz chopped cooked ham and 2 oz cheese (<20% M.F.)
- Water, tea or coffee
Morning Snack
- 1/2 cup strawberries
Lunch
- Open-faced tuna sandwich - Country Harvest Oat Bran bread, 1/3 cup flaked tuna, 2 tbsp chopped black olives, 1 tbsp calorie-reduced mayonnaise, tomato slices and lettuce
- Watercress, fig and mango salad - 1/2 bunch watercress, diced 1/2 mango, 1 tbsp hazelnuts, 2 diced figs and dressing (1 tbsp olive oil and 1/2 tbsp lemon juice)
- 2 small oatmeal cookies
- 1/2 cup milk (<2% M.F.)
Afternoon Snack
- Yogourt popsicles - blend 1/2 cup plain yogourt, 1/3 cup fruit juice concentrate and 1/3 cup milk (<2% M.F.) - pour into popsicle molds, partly freeze and insert popsicle sticks in the middle
Dinner
- Fresh vegetable gazpacho - 1 can pureed Italian tomatoes, 2 celery stalks, 3/4 cup plain yogourt, 1 chopped celery stalk, 1/4 cup radishes, 1/2 cup chopped red and green bell peppers, 1/4 cup minced green onions, 2 tbsp extra-virgin olive oil and hot sauce - serve chilled
- 4 rusks
- 1/2 cup seasonal fruit salad
- Water, tea or herbal tea
