Light and Simple Meal Ideas - Wednesday
Breakfast
- 1 toasted Country Harvest Twelve Grain bagel with 1 tbsp butter or margarine
- Melon and cottage cheese salad - 3/4 cup drained cottage cheese, 1 tbsp vanilla yogourt (<2% M.F.), 1/2 tsp honey and 1 cup mixed melon (cantaloupe, watermelon and honeydew)
- 2 tbsp walnuts
- Water, tea or coffee
Morning Snack
- 1/2 cup strawberries
Lunch
- 1/2 cup vegetable juice
- 1/2 cup tabouleh (bulgur wheat, lime juice, parsley, garlic and tomatoes)
- 1 slice toasted Country Harvest Sunflower Flax bread with 1 tbsp hummus
- Peach breezy - blend 2 tbsp peach yogourt (<2% M.F.), 2 tbsp cold milk (<2% M.F.) and 1/2 cup peach sherbet**
Afternoon Snack
- 1 small low-fat oatmeal muffin
- 1 cup milk (<2% M.F.)
Dinner
- Salmon and couscous salad - 1 cup cooked couscous, 1 chopped celery stalk, 1/4 cucumber (seeded and diced), 1 chopped shallot, 1/2 tbsp dried dill, 3 oz cooked salmon chunks, and dressing (1 tbsp olive oil, 1/2 tbsp lemon juice, 1 tsp Dijon mustard and 1/2 tsp grated lemon zest)
- Grill or bake 1 cup mixed vegetables sprinkled lightly with olive oil and seasonings
- 1/2 mango
- Water, tea or herbal tea
