Roasted Broccoli and Grilled Cheese Melt

Ingredients

For the broccoli

  • 1 medium head broccoli florets, finely chooped.
  • 2 tbsps. (30ml) olive oil
  • 1/2 tsps. (2.5ml) salt
  • 1/4 tsp. (1.25ml) freshly cracked black pepper



For the sandwiches



Instructions

  1. Preheat the oven to 400ᵒF (204C). On a sheet pan, mix the broccoli, oil, salt, and pepper. Roast for 8 to 10 minutes, or until the broccoli is evenly roasted but not burnt. Remove broccoli from the oven set aside and allow to cool.
  2. Preheat a non stick skillet over medium-low heat.
  3. Spread softened butter evenly on one side of each slice of bread.
  4. Layer ½ the cheese evenly on the unbuttered side of 4 of the Country Harvest™ slices.
  5. Top the cheese evenly with roasted broccoli pieces, add the remaining cheese on top of the broccoli.
  6. This keeps the small pieces of broccoli from falling out as the cheese melts.
  7. Top each completed sandwich bottom with the remaining slices of bread, butter side out.
  8. Grill each sandwich in skillet, turning sandwiches over once the bottom of the sandwich is browned, cook until the cheese melts and the bread is evenly toasted on both sides.
  9. Cut sandwiches in half and enjoy.
