Ingredients
2 slices of Herb & Garlic | |
1 tsp. of olive oil | |
2 cups. of spinach | |
1 clove of garlic | |
6 cherry tomatoes | |
1/4 of a sweet onion or shallot | |
1/2 cup of shredded mozzarella |
How to make
1. | Set oven to 400°F. |
2. | Place a saucepan over medium heat and add in olive oil. |
3. | Finely chop the onion and garlic before placing in the pan to cook. Leave the tomatoes round or cut in half. Sauté the mixture until the onions are translucent and the tomatoes are slightly softened. Add in the chopped spinach until it wilts and remove from the heat. |
4. | Lightly brush 2 slices of Country Harvest™ Herb & Garlic with olive oil and place in a hot pan to toast. |
5. | Once the bread is golden brown and crispy. Remove from the heat and place of a non-stick baking sheet. |
6. | Add the vegetable mixture on both slices of bread before topping with the mozzarella. Place the baking sheet in the oven for 5-8 minutes or until the cheese is melted. |
7. | Plate, serve and enjoy! |
