Ingredients

8 slices Cranberry & Oats
1 medium sweet onion, cut into wedges
1 tbsp. of olive, avocado or vegetable oil
2 tbsp. of apple jelly
8 slices of white cheddar or Gouda cheese
8 oz. roasted turkey or chicken, slices
1 medium Granny Smith Apple, cored and thinly sliced
2-3 tbsp. of butter, softened

How to make

1. In a large skillet cook onion in hot oil over medium heat 8 to 10 minutes or until softened and beginning to brown. Place cooked onions in a small bowl; stir in the apple jelly.
2. Top half of the bread slices with 1 slice of cheese, turkey/chicken, apple slices, onion mixture and remaining cheese slice. Place remaining bread slice on top. Repeat until you have all 4 sandwiches done.
3. Spread the top slices of bread with half of the butter. Place the large skillet back on the stove over medium heat. Place the buttered sides of the sandwich down, in the skillet. Carefully spread the unbuttered bread with the remaining butter. Place two sandwiches at a time in the pan and cook for 5 to 6 minutes (flipping half way through) or until the cheese is melted and the bread is a crispy golden brown.
