Ingredients
4 slices of Everything bread | |
4 slices of bacon cut in half | |
2 eggs | |
1 avocado | |
1/3 cup chopped cherry tomatoes (optional) | |
microgreens | |
salt & pepper |
How to make
1. | Cook bacon in pan or on a griddle over medium heat until fully cooked and crispy on both sides. Once done, place on paper-towel lined plate and remove grease from pan. |
2. | Lightly fry Country Harvest™ Everything Bread in the same pan on both sides until golden brown. Set aside when done. |
3. | Cook your eggs sunny side up in your pan until egg whites are set and yolk is slightly runny (approximately 2-3 minutes). Once done, lightly salt and add pepper to taste. |
4. | As your egg is cooking, mash an avocado and add salt & pepper to your liking. Add chopped tomatoes to your avocado mash if you would like. |
5. | Spread the avocado mash evenly on two slices bread. Add bacon and one egg to each slice. Top with microgreens and place a plain slice of bread on top of each. |
6. | Once assembled, plate your sandwiches, slice and enjoy! |
