Ingredients

4 slices of Everything bread
4 slices of bacon cut in half
2 eggs
1 avocado
1/3 cup chopped cherry tomatoes (optional)
microgreens
salt & pepper

How to make

1. Cook bacon in pan or on a griddle over medium heat until fully cooked and crispy on both sides. Once done, place on paper-towel lined plate and remove grease from pan.
2. Lightly fry Country Harvest™ Everything Bread in the same pan on both sides until golden brown. Set aside when done.
3. Cook your eggs sunny side up in your pan until egg whites are set and yolk is slightly runny (approximately 2-3 minutes). Once done, lightly salt and add pepper to taste.
4. As your egg is cooking, mash an avocado and add salt & pepper to your liking. Add chopped tomatoes to your avocado mash if you would like.
5. Spread the avocado mash evenly on two slices bread. Add bacon and one egg to each slice. Top with microgreens and place a plain slice of bread on top of each.
6. Once assembled, plate your sandwiches, slice and enjoy!
