Ingredients

4 Ancient Grains with Red Fife
3 Tbsp. of Salted butter
1 Small Sweet Onion
1 Tbsp. Onion soup mix
1 Tbsp. Chopped Thyme
4 Tsp. of Dijon Mustard
1/2 Cup. of grated Cheddar Cheese
1/2 Cup. of grated Gruyere Cheese
1/4 Cup. of Crispy Onions

Ingredients

4 Ancient Grains with Red Fife
3 Tbsp. of Salted butter
1 Small Sweet Onion
1 Tbsp. Onion soup mix
1 Tbsp. Chopped Thyme
4 Tsp. of Dijon Mustard
1/2 Cup. of grated Cheddar Cheese
1/2 Cup. of grated Gruyere Cheese
1/4 Cup. of Crispy Onions

How to make

1. Melt 1 tbsp. of butter in a large frying pan over medium heat.
2. Add the onion and cook until the slices start to wilt and turn translucent, about 3 minutes. Then add the onion soup mix, thyme and 2 tbsp. of water.
3. Turn the heat to low, then continue to cook, stirring and adding more water one tablespoon at a time if the mixture begins to dry out or until the onions are soft and golden brown about 5-10 minutes. Remove the pan from the heat and set aside.
4. In another frying pan melt 1 tbsp. of butter over medium heat.
5. Spread 1 tsp. of mustard onto each slice of bread.
6. Divide the Cheddar, Gruyere, caramelized onions and crispy onions between 2 slices of bread on top of the mustard.
7. Top each with another slice of bread, mustard-side in, and lay the sandwiches in the pan.
8. Allow the sandwiches to cook, pressing down on the top of them to ensure they are getting brown and crispy.
9. Add the last tbsp. of butter into the pan and flip the sandwiches, cooking until the cheese is melted.
10. Cut in half and serve.
