Roasted Broccoli and Grilled Cheese Melt

Ingredients
For the broccoli: | |
1 medium head broccoli florets, finely chooped. | |
2 tbsps. (30ml) olive oil | |
1/2tsps. (2.5ml) salt | |
1/4 tsp. (1.25ml) freshly cracked black pepper | |
For the sandwiches: | |
8 slices 14 Grains Bread | |
4 tsps. (20ml) Unsalted butter,softened | |
2 cups (480ml)cheddar cheese shredded or thinly sliced |
How to make
1. | For the broccoli: |
2. | Preheat the oven to 400ᵒF (204C).On a sheet pan, mix the broccoli, oil, salt, and pepper. Roast for 8 to 10 minutes, or until the broccoli is evenly roasted but not burnt. Remove broccoli from the oven set aside and allow to cool. |
3. | For the sandwiches: |
4. | Preheat a non stick skillet over medium-low heat. |
5. | Spread softened butter evenly on one side of each slice of bread. |
6. | Layer ½ the cheese evenly on the unbuttered side of 4 of the Country Harvest™ slices. |
7. | Top the cheese evenly with roasted broccoli pieces, add the remaining cheese on top of the broccoli. |
8. | This keeps the small pieces of broccoli from falling out as the cheese melts. |
9. | Top each completed sandwich bottom with the remaining slices of bread, butter side out. |
10. | Grill each sandwich in skillet, turning sandwiches over once the bottom of the sandwich is browned, cook until the cheese melts and the bread is evenly toasted on both sides. |
11. | Cut sandwiches in half and enjoy. |
