Ingredients

4 Slices NSA White with Whole Grains
2 tablespoons butter
2 oz cheddar cheese, sliced
2 oz mozzarella cheese, sliced
1 Eggplant, sliced and roasted
¼ cup olive oil (for drizzling over eggplant)
Pinch salt and pepper
6 Basil leaves
1 Tomato, sliced

How to make

1. Wash and thinly slice eggplant. Add to a fully lined baking sheet. Drizzle eggplant slices with olive oil and sprinkle salt and pepper on both sides. Bake in the oven at 400F for 30 min, flipping once halfway through.
2. Thinly slice tomato and set aside.
3. To make grilled cheese, heat a large pan to medium heat. If the pan cannot fry four slices of bread at once, fry two slices and repeat the process twice.
4. Butter 4 slices of Country Harvest No Sugar Added White Bread. Evenly layer both kinds of cheese on each slice of bread and place it on the buttered pan. Do not close the grilled cheese yet.
5. Fry bread, cheese side facing up, for 4 minutes. Remove two pieces of bread from the pan.
6. Once the eggplant is finished, place two thin slices of eggplant, two slices of tomato, and 3 basil leaves, each on two of your four slices. Close your sandwich and grill for 1 more minute or until cheese is melted.
7. Slice grilled cheese sandwiches, serve and enjoy!
