Ingredients
6 slices of Stone Milled | |
6 oz. of crumbled feta | |
2 oz. of cream cheese room temperature | |
2/3 cup of extra virgin olive oil | |
2 tbsp. of freshly squeeze lemon juice | |
Salt & pepper to taste | |
2 tbsp. of minced shallots | |
2 tbsp. of minced garlic | |
2 tbsp. of red wine vinegar | |
2 tbsp. of toasted pine nuts | |
3 tbsp. of finely chopped basil leaves |
How to make
1. | WHIPPED FETA |
2. | Place the feta & cream cheese in a food processor or blender and pulse until the cheese are mixed. |
3. | Add a 1/3 cup of olive oil, lemon juice, salt & pepper to taste and mixed until smooth. |
4. | TOMATOES |
5. | Combine shallots, garlic and vinegar in a medium bowl and let it sit for 5 minutes. |
6. | Add in olive oil, 1 tsp. of salt, ½ tsp. of pepper and sliced tomatoes stirring gently. Let the mixture sit for 10 minutes & sprinkle with basil. |
7. | TOASTIE |
8. | Lightly brush both sides of bread with olive oil and place in the oven at 350◦F for 10 minutes until the bread is golden brown and crispy. |
9. | Once the bread is cooled, lightly spread the whipped feta across each piece of toast and gently spoon the tomatoes on top finishing off with a little basil and toasted pine nuts. |
10. | Cut the toast in fourths and serve a quick tasty bit. |
