Ingredients

6 slices of Stone Milled
6 oz. of crumbled feta
2 oz. of cream cheese room temperature ​
2/3 cup of extra virgin olive oil​
2 tbsp. of freshly squeeze lemon juice​
Salt & pepper to taste​
2 tbsp. of minced shallots
2 tbsp. of minced garlic
2 tbsp. of red wine vinegar
2 tbsp. of toasted pine nuts​
3 tbsp. of finely chopped basil leaves

Ingredients

6 slices of Stone Milled
6 oz. of crumbled feta
2 oz. of cream cheese room temperature ​
2/3 cup of extra virgin olive oil​

2 tbsp. of minced garlic
2 tbsp. of red wine vinegar
2 tbsp. of toasted pine nuts​
3 tbsp. of finely chopped basil leaves

How to make

1. WHIPPED FETA
2. Place the feta & cream cheese in a food processor or blender and pulse until the cheese are mixed. ​
3. Add a 1/3 cup of olive oil, lemon juice, salt & pepper to taste and mixed until smooth​.
4. TOMATOES
5. Combine shallots, garlic and vinegar in a medium bowl and let it sit for 5 minutes​.
6. Add in olive oil, 1 tsp. of salt, ½ tsp. of pepper and sliced tomatoes stirring gently. Let the mixture sit for 10 minutes & sprinkle with basil​.
7. TOASTIE
8. Lightly brush both sides of bread with olive oil and place in the oven at 350◦F for 10 minutes until the bread is golden brown and crispy.
9. Once the bread is cooled, lightly spread the whipped feta across each piece of toast and gently spoon the tomatoes on top finishing off with a little basil and toasted pine nuts.​
10. Cut the toast in fourths and serve a quick tasty bit. ​
