Ingredients
| 4 slices NSA White with Whole Grains | |
| 4 eggs | |
| 1 avocado | |
| 4 tbsp. of feta cheese | |
| 8 to 10 grape tomatoes, halved | |
| Salt & Pepper to taste | 
How to make
| 1. | Place the eggs in a large pot and cover them with an inch of water. Bring to a boil, then cover the pot and reduce the heat to low, cooking for 10 minutes. Remove eggs from the heat & place in a medium-sized bowl filled with ice water. Let them cool for 20 to 25 minutes before peeling the shells. | 
| 2. | Peel the avocado and place in a bowl. Add juice from half a lemon, salt, pepper and mash with a fork.  | 
| 3. | Toast bread, then spread the mashed avocado on each slice of bread.  | 
| 4. | Using a grater with fine holes grate the egg on top of each slice of toast. Top with feta, halved tomatoes, season with salt and pepper and serve.  |
