2 Bagels split in half Sesame4 tbsp. of unsalted butter, softened4 large eggs1 tbsp. of waterOptional 2 oz. of smoked salmon, bacon or avocado.

- 4 large eggs
- 1 tbsp. of water

If necessary, widen the holes of the bagel halves by a few centimeters or inches using a small pairing knifeSpread bagel halves evenly with butter on both sides.Warm a 12-inch skillet over medium heat. Place bagel halves, cut side up, in skillet. Cook until golden brown about 2 to 3 minutesFlip bagel halves cut sides down and reduce heat to low. Crack eggs into the bagel holes and pour 1 tbsp. of water around the edge of the skillet and cover with a lid.Cook the egg until the whites are set and the yolks are cooked to your desired doneness, 5 to 8 minutes.Transfer the bagel halves to a plate; season with salt and pepper. Serve with smoked salmon, bacon or avocado if you choose.
