Instructions
Cut the brie into 4 equal pieces. Slice the pears horizontally, removing the core and seeds of the middle slices. Stack the sage leaves on top of each other, roll and slice into thin strips.Heat the cast iron or non-stick skillet over medium heat. Spread butter on one side of each piece of bread. Place one slice of the buttered bread side down in the pan. Break the brie into pieces over the bread. Stack the brie with 3 slices of pear, sprinkling about 1 tsp. of chopped sage. Add another slice of brie broken into pieces over the pear and top with a slice of buttered bread, butter side up. Cook the sandwich for 2 to 3 minutes on each side until the bread is crispy/golden brown and the cheesy is melting. Using a wide spatula, flip over the sandwich and cook for another 2 to 3 minutes. Repeat with the remaining ingredients. Cut sandwiches into small cubes, placing toothpicks in each cube to prevent the sandwich from falling apart. Drizzle with a balsamic glaze and serve. .
