4 slices NSA White with Whole Grains4 eggs1 avocado4 tbsp. of feta cheese8 to 10 grape tomatoes, halvedSalt & Pepper to taste.

- 4 eggs
- 1 avocado
- 4 tbsp. of feta cheese
- 8 to 10 grape tomatoes, halved
- Salt & Pepper to taste
Instructions.
Instructions
Place the eggs in a large pot and cover them with an inch of water. Bring to a boil, then cover the pot and reduce the heat to low, cooking for 10 minutes. Remove eggs from the heat & place in a medium-sized bowl filled with ice water. Let them cool for 20 to 25 minutes before peeling the shells.Peel the avocado and place in a bowl. Add juice from half a lemon, salt, pepper and mash with a fork. Toast bread, then spread the mashed avocado on each slice of bread. Using a grater with fine holes grate the egg on top of each slice of toast. Top with feta, halved tomatoes, season with salt and pepper and serve. .
