| ½ apple, finely chopped (Pink Lady or Gala work best) | |
| ½ fennel bulb, finely chopped | |
| ½ small shallot, finely chopped | |
| 8 oz. poached, roasted, or rotisserie chicken, torn into bite-size pieces | |
| 2 tbsp. mayonnaise | |
| 1 tbsp. finely chopped fresh chives | |
| 1 tbsp. finely chopped fresh tarragon | |
| 2 tsp. finely grated lemon zest | |
| 1 tbsp. fresh lemon juice, plus more if needed | |
| Kosher salt, freshly ground pepper |
How to make
| 1. | Toast Country Harvest™ 14 Grains bagels to preference. |
| 2. | Using a fork, mix apple, fennel, shallot, chicken, mayonnaise, chives, tarragon, lemon zest, and 1 tbsp. lemon juice in a medium bowl until well combined. Season with salt, pepper,and more lemon juice, if desired. |
| 3. | Divide apple, fennel chicken mix evenly across the 4 bagels and enjoy! |
